Bread & Butter All The Way


Even the toughest growing season has some winners.  This year, cucumbers were tops and that means pickles!  We discovered an amazing bread and butter pickle recipe in an old Better Homes and Gardens cookbook.  The spiny Japanese cukes make the most beautiful slices.


These pickles are fast, fun and easy to make.  Best of all, they are delicious – even if you don’t normally like pickles.

Nothing slimy or gooey here.  Crisp, tangy, sweet and spicy all at once.

Slice up 4 quarts.  Add two sliced onions and some green or jalapeno pepper and three cloves of garlic  Stir in 1/3 cup of kosher salt and cover with tons of ice.  Let stand three hours.  Drain and bring to a boil in 3 cups of the best apple cider vinegar you can find with sugar, turmeric, celery and mustard seed.  Seal in hot jars.  We ate them on hamburgers, crackers with cream cheese, with grilled cheese sandwiches all year long.  Nothing beats opening a jar in January when summer on MDI seems so far away.
